Growing up as a vegetarian in the 80’s on a farm in Kentucky, I ate a lot of cheese. I have always been a devoted fan of beer cheese, famous throughout Kentucky and especially popular on Derby Day. Over many beers and many years, I perfected my beer cheese recipe, and it has ever since been requested by friends and family. When I moved to Asheville in 2009, I began to experiment with making beer cheese with local beer. The result was delicious, and I want to share it more widely: Bent Creek Beer Cheese!
